15 carbs could be a slice of bread or 15 carbs could be a slice of fruit, or a glass of milk and something. It is not so much the 15 carbs as what type of food you are eating that has 15 carbs. I can handle a piece of pumpernickle black bread with 12 carbs, butter and a slice of cheese, but only if I eat them with a salad. Alone they spike me. My wife makes the angel food cakes in loaf pans rather than the traditional round one. That way she or I can slice it thin and know that it will not spike me. cool idea, thanks for the suggestion. By the way do you have any stats on the angelfood cake. I am counting everything. Thank you .. I do appreciate all the great snack ideas, food ideas recipes you all have to offer. Check it out at: http://www.nal.usda.gov/fnic/cgi-bin/nut_search.pl According to them one slice that is 1/12 of a 10" diameter round angelfood cake is 29 gr carb. Since the piece that I have is less than half that amount I would guess it to be around 10 to 12 gr of carbs.

I did write the tofutti post. I find that if I wait 2 hours or so after dinner and then have one, I don’t spike. I also am trying the sugar-free version (though not carbfree of course)- it doesn’t use sugar alcohols, it uses aspartame. Alison

Doesn’t take guts, takes being an individual, some diabetics can eat 4 slices of bread at a sitting and not spike. How do you have your bread and when does it spike most? e.g are you eating white bread with no fat or protein? Grain bread with lots of fibre and fat? At breakfast? What other carbs are you eating at the time? Are you testing right before the meal as well as 2 hours PP?

I am type 2 for some 6 years now. I *could* eat two slices of the bread you mention if it has been long enough since my last meal, but I wouldn’t. If I was between 80 & 90 before eating them I would not normally go above 140, but it’s a bit like playing with a lighted stick of dynamite. Usually I eat one of the sugar free popsicles and a couple hands full of mixed nuts. (my hands by the way are very small. My wife and I wear the same size rings, a seven.) Now that our raspberries and blackberries are ripening most every day I am able to have a reasonable slice of angel food (about half the size of a slice of bread) and a couple of soup spoons of berries that have been sweetened with Sugar Twin. Also, I believe that those of us on low-carb diets and those on the standard USDA diet are using carb terminology a bit differently. By "carbs" the LC diet people usually mean "effective carbs" aka usable carbs. These are the starches and sugars that will become glucose and will affect insulin levels and bGs. Whereas, if I’m not mistaken, I believe the 15-carb-per-serving diet recommended by mainstream dieticians counts ALL carbs, including fiber and non-digestible carbs like sugar alchols. If I were to tell my doctor, who I have a lot of faith in, that I was going on a diet like that he would refuse to treat me or to prescribe medications for me. I would not blame him one bit either. Of course if you and your doctor are comfortable with it, go for it.

I had never heard of it until my doctor told me about it. Needless to say I was quite skeptical. But once I started it and saw how my blood pressure went down, my bg became normal again, and my cholesterol ratio improved, I was thoroughly convinced. Lots pf docs are recommending it now. Sugar alcohols, like isomalt, and all the other’s whose names hve just slipped my mind, are slower absorbing that reglar sugars. They tend to no spike you, Tjey hve one side effect you muct beware of. They can give you, as a kid once sid, "dire rear" or the runs. I call them stomach achers. one pop won’t usually bring this about, but if you go crazy and try to eat the whole box you will know it. They are not calorie reduced, but can be fine for an occasional treat. I recently discovered Life Savers sugar Free ice pops. they have 10 calories a skinny pop and only 2 carbos. they are sweetened with artificial sweeteners rather than so many sugar alcohols. Of course, they are not chocolate or sreamy, but I find them a nice colc sett treat that don’t do me harm if I eat a few. Wendy Baker

I believe anything listed under Total Carb is a part of the total. Except, for fiber, which is subtracted from total to get the actual total!

Sorbitol, mannitol etc are sugar alcohols and most sugar free products are made with them. They supposedly do not raise blood sugar, but too much of it does cause gas and diarhhea. Go easy on the stuff. Loretta I recently came across a delicious frozen chocolate pop called
