I’ve been running around like a man released from prison all morning, sorting through all (well, some of) the piles and dust and crap that’s built up over the last six months.  I think I’ve overdone it a bit but hey, a strong productive morning is nothing to be scoffed at, nor is an afternoon nap. When I go back to work I’ll be within walking distance of NYC’s Chinatown so I can get all the ingredients then.  Thanks much for the pointers. Gordo

Response:

OK Gordo, best idea is google ‘hot and sour soup recipe" and see what you come up with.  Hot and sour soup is common all over east and southeast asia, micronesia, etc etc.  Always different.  The Manadrin twist (and supposedly the mark of distinction) is to use the chicken’s blood to thicken the soup which of course gives it a definite bend in more ways than one.  Ooh mah mee, you might want to look that up too, because it is closely associated with dishes like this.  We met some folks directly from Singapore this fall, and they had an entirely different recipe.  We were talking menu differences, of course.  I still like pork and pea egg swirl soup the most. I’ve sometimes substitued fresh oysters in season, roughly chopped up. Heaven.  Not very often these years, though.  I make too much of a mess in the kitchen. It’s obvious, that I am into a lot of different things and I remember lots of stuff, so I hope nobody minds my prattle.  It is mostly coherant and true, I can honestly avow! Hot and sour changes each time I try it.  It’s hard to get cloud’s ears and dehydrated chinese mushrooms, but chili oil and ginger, a bit of hoisin, some peanut oil all help in the wok when you pre-fry the shrimp and the hard ingredients, either at the same time as the shrimp or just after.  Don’t clean out the wok between stir fry and adding the pre-heated stock mix, then the tbsp. of cornstarch dissolved in two tbsp of hot water.  Just cut all the veggies juilienne style.  I also used the other day some bamboo shoots, some chives shredded, about 1/2 cup of firm tofu cut the same way and the egg swirl trick.  It’s just like stir fry then you add the water/stock. Your energy issues are similar to mine.  Although I watch the Food channel as someone else might watch Daytime TV and CNN, my intake capacity is still low from the Atkins days.  I think that I am happy that way.  Not eat lots, just a few mouthfuls but have a choice of comfy food like Patty Melts or Refried Dim Sum when you feel you need them, otherwise good whole foods some exercise if you can and keep your appetite stoked. We did the turkey carcass soup trick on Columbus Day.  We made some hot and sour (not too hot) soup the other day using some jumbo shrimp and some Daikon radish, mushroom, chicken broth, bean sprouts, egg swirl, cornstarch, seasonings.  I learned how to do some basic cantonese style back at university, just by asking the local owner operators of the ‘Village Hong Kong" Restaurant if I could watch.  Never learned how to make dim sum, this place was a little lower tech.  It sounds like you’re into reductions and making stocks and things, so you may want to remember hot and sour if you like the spice.  Really easy to whip up. Food channel  = solace, peace of mind, comfort and good feelings.  Leave the wine part out of the meal for the time being, anyway. :-) Cactus Jammies – Hide quoted text — Show quoted text -"Gordo Mondragon" <ga_mondra…@yahoo.com> wrote in message > I had severe limits.  Good days I could get stuff done in the morning > and then lay down the rest of the day.  Bad days I couldn’t get stuff > done in the morning at all, and if I pushed myself too hard in the > morning (mentally or physically) I would be a wreck the rest of the day. > The last time i checked, 15 minutes on an elliptical machine at a > reasonable clip wrecked me.  I am looking forward to getting back to the > gym. >>  I continue to drool >> at the dream of a greasey mushroom cheeze burger or some halibut and >> chips. > Do you guys do Patty Melts?  They’re traditional diner food which seem > to be disappearing from diners: sourdough bread, buttered, filled with a > grilled hamburger, grilled onions, swiss cheese, and russian dressing or > mustard.  Then the whole thing is grilled on a flat grill.  There were > times when that was ALL I wanted to eat. > I made a stock from the turkey carcass with added onion, carrots, > celery.  Chopped up the leftover turkey meat to bits and also chopped up > two of the homemade ancho chiles I made this sumer from the garden. > Also added a homemade chipotle for the perfect cold-weather soup. > That’s a good greatment food, I think – tasty, balance of > protein/starch, slight glow in the mouth, and can be easily heated in a > bowl in the microwave in two minutes when the need strikes but the > energy isn’t there. >… >> Cactus Jammies

I’ve always thought that hot and sour should be easy to make and a lot better than most chinese takeouts make it.  Have a good recipe for it? I love reductions.  I am calling around tomorrow to find beef and veal bones to make this winter’s batch of demi glace.  I was starting to experiment with savory gelatins but even though the taste could be great, it was still meat jello which was just wrong. > Food channel  = solace, peace of mind, comfort and good feelings.  Leave the > wine part out of the meal for the time being, anyway. :-)

I highly recommend a good aromatic Pinot Noir for your first glass,  it was almost worth the wait. I got to the point where any kind of thinking would wear me out and cooking shows (except for Iron Chef) are like training films for me – I automatically pay attention and learn and therefore wore out fast. I had two defaults: MAD TV (some really funny stuff over the years) and plastic surgery before-and-after shows.  These people are from other planets, all of them, the way they’re filmed, the attitudes, the "small breast enhancements" that turned out to be bowling-ball sized and cadaver-tissue lip implants that are just freakish.  So it provided hours of entertainment :)

5′ 11" and currently 203 lbs.  would like to get 180.

Response:

I have always tried to eat a balanced diet and avoid over-processed foods in general and sugars and starches specifically.  Something that I wasn’t excited about in the store – but bought anyway – was fruit, especially apples and pears.  I’d go downstairs to look for ice cream and not find it, and think "shit, only apples" and then happily eat three of them. I also discovered that eating an entire box of jellybelly jelly beans would cause a noticeable crash soon after.  And almost nothing made a difference (medication-caused, I think) for the 4am insistent bowel dump. My doctor also tested my testosterone before we started and it was low normal, so I’ve been using a topical testosterone gel to bump me up to higher in the normal range.  I don’t have any liver damage, don’t know if it’s an issue if you do, and I believe it gave me a bit more energy and more importantly kept my lethargic "hey, let’s lay down and watch more tv while stoned" body from losing as much muscle tone (and replacing it with fat) as I should have. Maybe it’s a doctor game: "you will probably lose some weight, don’t worry, it’s normal" and when you don’t, or gain it quickly back, they can say "that’s a positive sign", even though they and we now know that that’s what most people seem to do. I had severe limits.  Good days I could get stuff done in the morning and then lay down the rest of the day.  Bad days I couldn’t get stuff done in the morning at all, and if I pushed myself too hard in the morning (mentally or physically) I would be a wreck the rest of the day. The last time i checked, 15 minutes on an elliptical machine at a reasonable clip wrecked me.  I am looking forward to getting back to the gym. >  I continue to drool > at the dream of a greasey mushroom cheeze burger or some halibut and chips.

Do you guys do Patty Melts?  They’re traditional diner food which seem to be disappearing from diners: sourdough bread, buttered, filled with a grilled hamburger, grilled onions, swiss cheese, and russian dressing or mustard.  Then the whole thing is grilled on a flat grill.  There were times when that was ALL I wanted to eat. I made a stock from the turkey carcass with added onion, carrots, celery.  Chopped up the leftover turkey meat to bits and also chopped up two of the homemade ancho chiles I made this sumer from the garden.   Also added a homemade chipotle for the perfect cold-weather soup.   That’s a good greatment food, I think – tasty, balance of protein/starch, slight glow in the mouth, and can be easily heated in a bowl in the microwave in two minutes when the need strikes but the energy isn’t there. – Hide quoted text — Show quoted text -> Maybe I will go up to the refrigerator now and look for some more of that > hummus, that was good with the nuked dried lo-carb tortillas.  Might have to > stoke up with a toke up first, though. > Cactus Jammies > "Michael L. Turkey dinner will do that to you. On my 1st shot i was so hungry i was cooking at 2:30am. I lost weight in the end but i put on 15 before tx started so i would have some spare if needed. I lived on ice cream, chicken nuggets, tv dinners yogurt, cherry pie. Donuts and Coke a cola was the main event with the exception for smoking GB. Seldom cooked so spaced when i did i would forget it and burn it. I just ate some turkey dinner myself tonight sooooo tasty. Juanita

I was losing weight at first on TX but now I’m gaining some of it back.  I never really lost my appetite in the first place.  But now I’ve taken to eating lots of ice cream and junk like potato chips.  I have to hold myself back from not eating more actually.  I ate like a gallon of chocolate ice cream last week.  All the foods I liked before TX are just as tasty.  Never did have any nausea.  Yep, turkey and fixins.   Hmmmmm.  What the hell, time for a sammich. Michael – I lost 10-15lbs when I first got sick and then started treatment (6′3", 225lbs normally).  Green stuff gave me an appetite and friends were good enough to come over often and fix me yummy things to eat.  I rapidly got back to 225 and now I’m 230 with a wee little belly. I credit it to a natural resistance to nausea (I rarely if ever have felt too sick to eat) and the munchies.  My hope for you is that this is a good trend for you. Gordo

I have not lost the amount of weight I expected to. I thought that everyone loses alot, but that’s not my expierience. I have had a tremendous appetite since around week 3. I can’t seem to get enough, although I have lost about 12# in 20 weeks of tx. I have had daily "waves of nausea"….but nothing continuous. Take care & eat all you want :-) Mark

I actually WANT to lose some. I have type 2 diabetes, That I keep VERY under control with diet and Glucophage. I’m on top of it.  I have been told by dropping more weight, it _may_ be that I could stop my meds.

I was on Atkins, exploring the wonderful world of ooh mah mee until the tx started now I am onto pergoies (spaciba!) and cheezies (Canadian Junk Food) Atkins can wait for 40 weeks.  I lost 40 lbs in 18 months on that method of eating and I can do it again after I am back in my right me.  Still taking no sugar of any type, just the occassional starchy and fatty combo.  Weight gain about 2lbs back in last 2 months.  Hard to get exercize to burn the fats, but need the proteins and some types of carbos.   I continue to drool at the dream of a greasey mushroom cheeze burger or some halibut and chips. Maybe I will go up to the refrigerator now and look for some more of that hummus, that was good with the nuked dried lo-carb tortillas.  Might have to stoke up with a toke up first, though.
